- 2 cup old-fashioned rolled oats
- 1 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp salt
- ¾ cup whole milk
- ½ cup honey
- 1 large egg
- 1 tsp vanilla extract
- 3 Tbsp brown butter see note below recipe card
- 1 cup diced peaches about 1-2 medium peaches
- ¾ cup fresh or frozen blueberries

Make Ahead Instructions
- Spray an 8×8 baking dish and set aside.
- Mix together the whole milk, honey, egg, vanilla, and brown butter in a medium size mixing bowl. Set aside.
- In a small mixing bowl, combine the old-fashioned rolled oats, baking powder, cinnamon, and salt. Add to the wet ingredients and mix. Add the diced peaches and blueberries and stir to combine.
- Pour the mixture into the prepared baking dish, cover, and refrigerate overnight.
- The next morning, preheat the oven to 350 degrees Fahrenheit, and then remove the baking dish from the refrigerator and allow it to sit at room temperature.
- Bake the oatmeal bake for 30-35 minutes, or until just set. Allow to cool for 5-10 minutes and then serve.
- Serve alone or top with maple syrup.
