Brown Butter Peach Blueberry Baked Oatmeal

This easy, make ahead oatmeal bake combines summer flavors of peaches and blueberries with the coziness of brown butter and oats for the perfect end-of-summer breakfast recipe.

Ingredients
  

  • 2 cup old-fashioned rolled oats
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¾ cup whole milk
  • ½ cup honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 Tbsp brown butter see note below recipe card
  • 1 cup diced peaches about 1-2 medium peaches
  • ¾ cup fresh or frozen blueberries

Make Ahead Instructions

  • Spray an 8x8 baking dish and set aside.
  • Mix together the whole milk, honey, egg, vanilla, and brown butter in a medium size mixing bowl. Set aside.
  • In a small mixing bowl, combine the old-fashioned rolled oats, baking powder, cinnamon, and salt. Add to the wet ingredients and mix. Add the diced peaches and blueberries and stir to combine.
  • Pour the mixture into the prepared baking dish, cover, and refrigerate overnight.
  • The next morning, preheat the oven to 350 degrees Fahrenheit, and then remove the baking dish from the refrigerator and allow it to sit at room temperature.
  • Bake the oatmeal bake for 30-35 minutes, or until just set. Allow to cool for 5-10 minutes and then serve.
  • Serve alone or top with maple syrup.
