Cuisine American
- 4½ cups rolled oats
- ½ cup einkorn wheat berries
- 1 cup chopped walnuts or nut of choice
- ½ cup melted coconut oil
- ⅔ cup maple syrup
- 1 tsp cinnamon
- ½ tsp salt
- 1½ tsp vanilla
- 1 cup dried cranberries or add-in of choice
Preheat the oven to 350 degrees Fahrenheit. Mill the einkorn wheat berries into a large mixing bowl and add the rolled oats, chopped walnuts, cinnamon, and salt. Stir to combine. Add the melted coconut oil, maple syrup, and vanilla extract and mix thoroughly. Add the dried fruit or add-ins and stir.
Pack the granola mixture into a 18x13 baking sheet and pack it down almost like it will be granola bars. Bake for 20 minutes. Remove from the oven and flip slabs of the granola mixture at a time (some will crumble, but try to keep each scoop together as much as possible). Bake for an additional 12-15 minutes, or until the granola is lightly golden.
Allow to cool till it hardens. Store in an airtight container at room temperature for up to two weeks.
